For Vegetable Jalfrezi
1/2 cup diagonally cut and parboiled baby corn
1/2 cup diagonally cut and parboiled carrot
1/2 cup diagonally cut and parboiled french beans
1/2 cup parboiled cauliflower florets
2 tbsp oil
1 tsp cumin seeds (jeera)
1/2 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
1/2 cup thinly sliced onions
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp garam masala
1/2 tsp dried fenugreek leaves (kasuri methi)
salt to taste
1/4 cup fresh tomato pulp
1 tbsp finely chopped coriander (dhania)

Preparation for Veg Jalfrezi

- Peel the skin from onions and discard it. Thinly slice the onions and keep aside.

How to make veg jalfrezi
- To cook mixed vegetable jalfrezi, heat the oil in a deep non-stick kadhai and add the cumin seeds.
- Add ginger paste.
- Add garlic paste.
- Mix well and sauté on a medium flame for a few seconds or until the raw aroma vanishes.
- Add the onions.
- Sauté on a medium flame for 2 minutes or until the onions are soft and pink.
- Add all the other vegetables starting with diagonally cut and parboiled baby corn. If you do not find baby corns, make use of sweet corn kernels.
- Add diagonally cut and parboiled carrot. It is important to cut the vegetables uniformly so, they take a similar cooking time and cook perfectly without getting mushy.
- Add diagonally cut and parboiled french beans. To make it more nutritious , you can add in protein in the form of paneer or soya nuggets.
- Add parboiled cauliflower florets. Other vegetables like broccoli florets, green peas, potato, capsicum, bell peppers can also be added if you like.
- Add chilli powder. The vegetable jalfrezi is supposed to be mildly spicy but you can adjust the quantity as per your preference.
- Add turmeric powder.
- Add coriander-cumin seeds powder.
- Add garam masala. Adjust the spice levels to suit your taste.
- Add dried fenugreek leaves.
- Add salt.
- Add 1 tbsp of water and mix well. The water prevents the spices from burning.
- Cover with a lid and cook on a medium flame for 3 minutes, while stirring occasionally. Do not overcook as you want the veggies to retain their crunch.
- Add the fresh tomato pulp. If you do not have tomato pulp handy, make use of tomato ketchup to provide the vegetable jalfrezi the much needed tangy flavor.
- Add coriander.
