Tips for Making this Recipe

There are a few things you can do to make sure this recipe comes out perfect everytime you make it.

  • Strain the eggnog. If you don’t like the texture of the spices in your egg nog you can strain it into a cheesecloth to give it a smoother texture.
  • Cool completely.Allow the eggnog to cool overnight and the flavors to fully combine.
  • Powdered sweetener is a must. You can use Powdered swerve, Powdered Monkfruit or your favorite. I have only tested it with Swerve and monk fruit but I would think others would work too.
  • Be sure to continue to whisk. It is important that when you are whisking the eggnog when it is cooking that you keep on going. You do not want it to get clumpy.
  • Use a cooking thermometer. You will need to make sure you have cooked the egg yolk mixture to a high enough temperature that it is safe to drink, this is best done with a cooking thermometer or a candy thermometer.

Sugar-Free Eggnog Recipe Ingredients

  • 4 large egg yolks
  • 3/4 cup powder erythritol low carb sweetener – Powdered swerve or Powdered Monkfruit
  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract

How to Make Sugar-Free Eggnog

In a small pot whisk together the raw egg yolks and the erythritol until well combined.

In another small pot add the heavy cream, almond milk, nutmeg, and cinnamon,

Over medium-high heat bring the mixture to a boil.

Once the cream mixture comes to a boil remove the cream from the heat.

Slowly whisk in a quarter of a cup of the mixture into the sugar and egg mixture making sure you are constantly stirring the egg yolks to prevent them from coagulating.

Keep stirring and add the rest of the cream mixture to the pot until all of the mixture is in the pot.

Place the pot back on the stove and heat over medium heat, making sure you keep stirring until the mixture has thickened up about 10 to 15 minutes and the mixture has reached 160ºF.

Remove the eggnog mixture from the heat and stir in the vanilla extract.

Allow the mixture to cool then place it in the fridge for at least 4 hours to allow the flavors to combine. I personally like to leave it overnight.
