i always look around for recipes which are easy to make and also do not compromise on the health aspects. most of my readers do send an email about a recipe which can be done in early morning busy hours. well, there are myriad recipes for dry curries but i personally like the leafy veggies based dry sabzi. the main reason i like methi ni bhaji is that it hardly takes minutes to prepare and to cook. unlike the other vegetables like potatoes or eggplant, you need to dice them and also boiling point is higher. so eventually it adds up to your cooking time to prepare. in addition, leafy veggies are less dry compared to other traditional dry variants and hence methi ki bhaji should satisfy your gravy based curries thirst too.
anyway, some easy and important tips and suggestions to make a perfect tasty methi bhaji recipe. firstly, i would heavily recommend chopping the fenugreek leaves roughly. do not chop them finely and you can mix and match it as we do not want our leaves to get dissolved while cooking. secondly, you can easily experiment the methichi patal bhaji by adding other veggies to give a new twist to it. perhaps you can add green peas, corns, finely chopped carrots or even capsicum to make it more colourful. lastly, if you wish to have a gravy based version of this recipe, you can toss the leaves in an onion and tomato based sauce. i personally like the dry variant but the gravy based version should be equally good in taste.

Ingredients
- 2 tbsp oil
- 4 clove garlic, chopped
- 2 green chilli, slit
- 1 onion, finely chopped
- ½ tsp turmeric
- 3 cup methi / fenugreek leaves, chopped
- ½ tsp salt
- ½ cup coconut, grated
Instructions
firstly, in a large kadai heat 2 tbsp oil and 4 clove garlic and 2 green chilli.
saute well until garlic turns golden brown.
further, add 1 onion and saute until onions shrink and turn translucent.
add ½ tsp turmeric and saute well.
now add 3 cup methi and saute for 3 minutes.
add ½ tsp salt and mix well.
cover and cook for 10 minutes on low to medium flame.
methi leaves will be cooked completely.
add ½ cup coconut and mix well.
cover and simmer for 2 minutes to absorb all flavours.
finally, enjoy methi bhaji with chapati or rice.

- firstly, make sure to wash the methi well before chopping.
- also, you can add soaked moong dal for variation.
- additionally, use fresh methi for rich flavour.
