If you’re a lover of soft, fluffy, chewy, fudge chocolate brownies, this one is for you!Thiseasy homemade brownie recipe will forever change the way you make brownies from scratch.

How To Make Brownies From Scratch

Making brownies from scratch is almost as easy as buying a brownie mix from the store, but there is just no comparison to the delicious taste and texture of a homemade brownie. The ingredients used in this easy brownie recipe are all ones I keep on-hand – nothing strange and nothing too perishable.

Baking Prep – Preheat your oven to 350 degrees F. Then grease the inside of an 8×8 baking pan with cooking spray.

Mix The Wet Ingredients – The brownie batter comes together by mixing the simple ingredients together. In a large saucepan, melt half of a cup of butter. Remove the butter from the heat and then stir in the eggs, sugar and vanilla.

Add Dry Ingredients – Next, you’ll add the dry ingredients by beating in the baking powder, cocoa flour and salt. Then you’ll gently folding in some chocolate chips and then spread the batter into your baking pan.

Cook – Put your brownies into the preheated oven, and then bake for 25-30 minutes. Keep an eye on them so they don’t overcook. When they’re done, you’ll be ready to indulge on the best chocolate brownies ever!

Brownie Frosting – Some people love putting frosting on top of their brownies, but I don’t think these brownies need it. I never put frosting on this brownie recipe but if you love frosting then go for it! I’m sure it’ll be delicious.

FAQs

Is milk or water better for brownies? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

What makes a brownie more fudgy? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

Which cocoa powder is best for brownies? ›

Unsweetened cocoa powder – Michelle recommends using Hershey's Special Dark Dutch-processed cocoa powder (I used Whole Foods' 365 Cocoa Powder). Make sure to sift it if it's lumpy!

How do you keep brownies soft and chewy? ›

Using airtight wrappings (including using plastic wrap right against the brownies) is key to keeping your brownies fresh, whether you're keeping them at room temperature for short-term storage, or planning to freeze them so you can have a fresh brownie ready whenever you need it.

What does adding an extra egg to brownie mix do? ›

They give brownies a lighter, drier, and more cake-like texture. If you prefer this over the chewy variety, then go ahead and crack in that additional egg. On the other hand, too many eggs will yield brownies that are hard, heavy, and tough.

Are brownies better with butter or oil? ›

In brownies, both butter and oil will offer a moist, tender texture, but only butter will give the dish the aeration needed for rising brownies well. If you use a cake brownie, butter is a better option because it helps rise the batter. For denser, fudge type brownies, oil is permissable.

What makes brownies cakey vs fudgy? ›

Achieving a fudgy brownie is all to do with the ratio of fat to flour. A fudgy brownie recipe will use more fat than flour. Generally this is achieved by adding more butter or real chocolate to your brownie recipe. A cakey brownie recipe on the other hand will call for more flour in the ratio of fat to flour.

Is Duncan Hines or Betty Crocker better for brownie mix? ›

If you like chewy, sticky brownies, I recommend: Betty Crocker Dark Chocolate Brownie Mix. If you like light, less dense brownies with a picture-perfect sugar top that flakes when sliced, I recommend: Duncan Hines Chewy Fudge Brownie Mix.

What are the three types of brownies? ›

Brownie textures fall into three general camps… Cakey, fudgy and chewy. Cakey brownies, like the name implies, are light, moist and airy, with a slightly fluffy, cake-like interior. Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact.

Should you sift cocoa powder for brownies? ›

If you don't get rid of them, they can bake up into dry spots in your brownies. Take the extra few seconds to sift the amount of cocoa powder called for in the recipe with a sifter or a fine mesh strainer.

Are homemade brownies better than box? ›

Homemade brownies are always better than boxed, even those Ghirardelli brownies - they are better, I promise. Since this recipe mimics a box mix, it uses cocoa in the batter instead of melted chocolate. There's no oil and no water, just pure buttery cocoa goodness.

What can you add to box brownie mix? ›

Vanilla extract – Pure vanilla extract adds rich flavor to brownies. Eggs – Most brownie mixes call for one whole egg. Adding one large egg plus an extra egg yolk gives brownies an ultra fudgy texture. Chocolate Chips – Even if your brownie mix contains chocolate, plan to add chocolate chips.

Why do my brownies get hard after they cool? ›

If the edges of your brownie are hard once it's cooled it's because you've over baked it. If your brownie has a whole lot of chocolate in it rather than cocoa, (most do) then the centre will seem underbaked because the chocolate is still molten.

Is it OK to use milk instead of water in brownie mix? ›

Instead of adding in the recommended amount of water, substitute it for milk to give the batter a slightly different consistency. Milk is richer than water, so the brownies will be richer, and they'll be denser, like fudge.

Should I use water or milk in baking? ›

In a pinch, if milk is not available, water may be substituted. To replace 1 cup of whole milk in a cake recipe, you can use 1 cup of water and 1 1/2 teaspoons of butter, according to Colorado State University Extension.

How does water affect brownies? ›

It is important to follow the instructions carefully to ensure the brownies turn out as expected. If you add too much water, the brownies may turn out too cake-like, and if you add too little water, they may be dry and crumbly.

Does milk or water make cake more moist? ›

One common ingredient swap that is known to help make cakes remarkably moist is using milk instead of water. Try switching out any water in your recipe for full-fat milk or buttermilk for a moist, decadent texture. Another ingredient that can enhance the moisture of your cake is mayonnaise.
